The JalapeƱo pepper is a medium-sized chili pepper and one of the most popular peppers in Mexico and the U.S. Jalapenos are named for their native Mexican city of Xalapa, Veracruz. When smoked and dried, Jalapenos become Chipotle peppers a process invented by the Aztecs.
Mature JalapeƱos are 2 to 3 inches in length and are typically picked and consumed while still green. Although, they can be allowed to fully ripen and turn red in color. Heat scale is about 2,000 to 8,000 Scovilles.
