Hollow Crown parsnips are tender, white, carrot-like roots have a mild, sweet and nutty flavor. They can grow 12 inches long and 3 inches in diameter.
Cold temperatures change the starch into sugar making them sweeter.
Sow in fall for harvest the following spring. Ideal soil temperature for germination is 50°–70°F.
